What is summer?

Rest, rest and more rest. I have grown to look forward to summers a few years ago. Summer is the few months when I am not on a schedule and I can take every moment in slowly.
I use the summer to re-evaluate my eating habits and to try out new ingredients. I have been truly grappling with how I can make dessert healthier and still decadent. How can I tie in all the bites of the tastes I love, into a recipe for a cookie I could eat endlessly without a spike in sugar? I wanted to make a cookie that has limited ingredients, but tastes so good; to be like the season of summer, simple, easy and so wonderful. Don't we always want summer to be endless?
So, I mixed in chocolate (of course), almonds (which I eat daily), sea salt (because it's summer and I love the beach), apples (because what is summer without fruit?), and a little inulin sugar, to create this new cookie that I call "Summer Salts."

It has the moisture of a freshly baked, homemade, chocolate chip cookie, and that feeling of sweetness that comes from eating something is honestly good for you.
